With over 35 years of Italian culinary experience, Chef Paolo’s culinary skills have taken him throughout the world, where he has worked with prestigious hotels such as The O&O Royal Mirage Hotel in Dubai, The Imperial Hotel in New Delhi, The Goodwood Park Hotel in Singapore, The Four Seasons Hotel and the Hilton in Tokyo, including renowned places in his home country, Italy.

Chef Paolo considers cooking a passion as much as a profession and this attitude has propelled him throughout his career as a refined Italian Chef.

His personality coupled with his creative flair as well as his love for authenticity, means that his creations always contain a vibrant and animated element to them, yet simultaneously managing to preserve the Italian heritage he grew up with.
